The paper is thick but the grain is fairly fine, so it's good for ink as well as watercolor or gouache.

Finding portable sketchbooks with good quality watercolor paper is difficult but Moleskine has always provided the quality I need.

You can sketch in it, erase lightly in it (with a rubber eraser), use watercolors, collage, but I don't recommend acrylics unless they are watered down significantly
