More than half my pans will not work, but for the ones which do this is electricity which works as fast as a burner, but more evenly distributed than fire.

This is an induction cooktop so your pan must be magnetic (steel iron or magnetic core) for it to work

Also, way easier to clean pans when done -- just put a little water in them, put them back on the cooktop on low heat, and after a few minutes, you can rub the food off with a soft silicone spatula.
